I’ve stopped eating meat this early year – not really out of any one particular reason, though the need to feed a cow 9 calories of grain to get 1 calorie of beef has a lot to do with it. In honesty, I’ve just stopped enjoying the taste of meat. I still eat and enjoy fish and seafood. I try not to be preachy or even mention it too much. Everybody knows an annoying/high maintenance/scowling vegetarian/vegan. The last thing I want to do is tell anyone else what to eat or do. This is probably the last time I’ll mention it. This is all to say, I’ve been looking for and finding a lot more meatless meals that are seasonal, satisfying and delicious! So stay tuned!
Moosewood Cookbook has this recipe for Sweet Potato Quesadillas that is amazing. Out of all the meatless meals we’ve tried, I guess it just comes to mind because it’s really satisfying and easy and the leftovers are good! We’re eating a lot of dishes from cultures that don’t eat a lot of meat – Middle Eastern, Greek, Indian, etc. Great flavors, too!
Joe, I think this is fantastic. Honestly, you, your garden and the recipes you’ve posted have really motivated me to be more genuine in my efforts to make vegetables shine. I’m an omnivore and will likely remain so, but meat/poultry are definitely playing 2nd fiddle to vegetables in my kitchen of late.
I appreciate your humble approach to vegetarianism. I admire you for treading gently on the earth. No meat=more calories can be devoted to veggies and fruit and ICE CREAM!!!
That’s awesome. I have made a commitment to eating LESS meat, and I gave up cooking meat over a year ago, mostly ’cause I hate dealing with its pre-cooked form. Also I like it best on a grill which I can’t have in my current apartment.
